Saskatoon Brunch Pancakes

Who doesn’t love a fluffy delicious pancake? This yummy recipe combines pancakes and a homemade Saskatoon berry sauce to make the ultimate sweet breakfast.
Serves 12.
Ingredients:
- 2 cups Saskatoon Berries
- ¼ cup white sugar
- ¼ cup butter
- ½ tsp. Cinnamon
- 6 eggs
- 1 cup low-fat cottage cheese
- ½ cup flour
- 2 Tbsp. vegetable oil
- ¾ tsp. Baking powder
- ½ tsp. Salt
- ½ tsp. Vanilla extract
In large saucepan combine Saskatoon berries, sugar, butter, and cinnamon. Cook over low heat, stirring until butter is melted and sugar is dissolved. Keep warm.Place remaining ingredients in a blender. Cover and blend on high speed 1 minute.
For each pancake pour ¼ cup of the batter onto a hot, lightly greased griddle.
Cook on both sides until golden brown. Top with Saskatoon berry mixture and enjoy!
