Recipe: Saskatoon Chicken En Creme

A savoury way to feature the Saskatoon berry. Try this at your next family supper! Serves 6.
Ingredients:
- 2 tbsp. butter
- 6 chicken breast halves
- 1 can cream of chicken soup
- 1 can mushrooms, drained
- 1 can chopped pineapple
- 1 cup saskatoon berries
- ¼ cup wine, optional
Instructions:
- Preheat oven to 350°F
- Melt butter in a 9x13” baking dish
- Turn chicken in butter to coat, place skin side up in baking dish
- Bake uncovered for 40 minutes
- Combine soup, mushrooms, pineapple, and saskatoon berries. Spoon over chicken and bake for another 15-20 minutes.
- Serve over rice
