Chicken and Saskatoon Berry Pasta Salad

A fresh and flavourful summer salad, perfect for your next barbeque!
Chicken and Saskatoon Berry Pasta Salad
- 2 cups spiral pasta (dry)
- 2 cups chicken, cooked and cubed
- 1 cup sliced celery
- 1 cup saskatoon berries
- 1 cup pea pods, trimmed and cut in half
- ½ cup chopped red bell pepper
- ¼ cup finely chopped red onion
- ¼ cup red wine vinegar
- 2 Tbsp. basil
- ½ cup grated parmesan cheese
- 1 cup red wine vinegar dressing
- Cook pasta according to package directions. About 1 minute before it is cooked, add pea pods along with remaining ingredients except parmesan cheese and dressing
- Toss with ½ cup of the dressing. Cover and refrigerate for several hours or overnight to blend flavours.
- Before serving, toss with remaining ½ cup dressing and parmesan cheese.
